Course Objectives

Sauces can turn a regular dish into something awesome. From salad dressings to dips, sauces can make or break a dish. This unit will equip learners with the knowledge and application skills on how to prepare Western cold sauces.

Learning Outcomes

On completion of this unit, learners will have the knowledge and skills to:

Prepare emulsified sauces

Prepare vegetable, fruit and/or herb based sauce

Use western cold sauces

Minimum Entry Requirement

No formal qualification - Participants should have the ability to converse, read & write in English.

Who should attend

Kitchen crew, kitchen assistant, counter crew and anyone who is keen to learn how to prepare Western cold sauces.
